5 quick and easy breakfast recipes for busy weekdays

Busy weekday mornings often leave little time for preparing elaborate breakfast meals. Despite the shortage of time, one still needs a nutritious meal to kick-start their day. Many breakfast recipes are easy to learn and quick to make, while also providing the necessary nutrients to keep consumers healthy throughout the day. Furthermore, such quick and energy-boosting meals can be made with minimal ingredients. Learning certain recipes is key to effortlessly preparing such meals for breakfast.

Polenta Porridge

This is one of the most nutritious 15-minute breakfast ideas. All one needs to make this porridge is a few cups of quick-cooking polenta, water, and cheese. To prepare this, mix and stir polenta and water in a small saucepan over medium-low heat. Once this semi-solid mixture begins to thicken and bubble, crack two eggs into the polenta and mix them vigorously for a minute. This gives the mixture a smooth texture and dollops of protein. Add 2 to 3 ounces of any cheese, a pinch of salt, butter, and a splash of olive oil. In about a minute or two, the cheese completely blends into the porridge. Turn off the heat, pour the porridge into a bowl, and garnish it with freshly ground pepper or some fresh herbs before serving it hot.

Chocolate Lover’s Pancakes

To make this dish, the ingredients needed are all-purpose flour, baking cocoa, sugar, baking powder, baking soda, salt, buttermilk, eggs, butter, vanilla extract, maple syrup, and chocolate syrup.

In a large bowl, whisk sugar, cocoa, flour, baking soda, baking powder, and salt. In a separate bowl, whisk egg, butter, vanilla, and buttermilk until they all blend. To these, add dry ingredients and stir until they moisten. In batches, pour cupfuls of the prepared batter onto the non-stick skillet over medium-heat flame. Cook the pancake until bubbles begin to form and pop, and they turn golden brown. Once done, flip it over and cook the other side until golden brown. Add a few spoons of the syrups on these before serving hot.

Scrambled Eggs with Cream Cheese

Most staple breakfast ideas are likely to include scrambled eggs in one form or another. This 15-minute recipe serves up enough portions for servings. To make this dish, one needs cream cheese, a few tablespoons of half-and-half cream, large eggs, Parmesan cheese, lemon-pepper seasoning, salt, cooked bacon, butter, and minced chives for garnishing.

To make this dish, beat cream cheese and cream in a bowl until their texture turns smooth. To this mixture, add beaten eggs, lemon pepper, salt, some butter, and Parmesan cheese to make the mixture thicker. Add bacon to the bowl and stir it. Simultaneously, in a large skillet, melt butter over a medium heat flame. Pour in the thickened egg mixture on the skillet. Cook and stir the mixture until the non-liquid egg remains, and turns dry and thick. Pour this dish onto a bowl and garnish it with chives before serving it.

Sausage-Egg Burritos

As they possess a potent mix of protein, vitamins, and minerals, eggs form the basis of many delicious and simple breakfast dishes. To make this dish, one needs 3 large eggs, half a pound bulk lean turkey breakfast sausage, some large egg whites, a tablespoon olive oil, chopped fresh spinach, seeded and chopped tomatoes, minced garlic clove, a quarter teaspoon pepper, a few whole wheat tortillas, and salsa for garnishing.

Over medium heat, cook the sausages for 4-6 minutes in a large non-stick skillet until they break into crumbles. Gently remove them from the pan. On the other side, whisk some eggs and egg whites in a small bowl until they blend. In the same pan, add eggs, stir, and cook them until they thicken completely and no trace of liquid remains. After that, remove the eggs from the pan and wipe the skillet if necessary. In another skillet, heat oil over medium-high heat before adding tomatoes, garlic, and spinach. Cook and stir for about 2 to 3 minutes until the spinach wilts. Add in the sausages and eggs before heating the mixture and sprinkling some pepper for flavor. Across multiple tortillas, fill spoonfuls of the fillings to serve. Fold the bottom and sides of the tortilla over the filling and roll them up neatly. Once done, serve them with salsa.

Sweet and Savory English Muffin

Sugary breakfasts help brighten the mood before one can begin their day. Also, sweet morning meals are easy to learn and prepare. This is why, waffles, crepes, and pancakes feature in so many peoples’ breakfasts across the land. These dishes, along with maple or any other syrup, provide decent amounts of protein and energy.

This English muffin involves just a handful of ingredients, such as butter, pesto, some eggs, shredded cheddar cheese, and any garnishes one wishes to choose. To begin with, one needs to use half an English muffin and pop it into a toaster. Simultaneously, mix up a pad of butter and some pesto in a heated pan. Fry an egg in the pan with a little pepper for accompaniment. Top this mixture with a sprinkle of shredded cheddar cheese. Place the egg on the first half of the muffin. To make the sweet portion, spread peanut butter on the second half of the muffin before pouring some honey onto it. One can even spruce things up further by adding dark chocolate chips to sprinkle on top. This dish takes around 15 minutes to prepare and leaves one feeling full for hours.
